The Process

At our company, we take pride in using advanced freeze-drying technology to preserve the vibrant flavor and rich nutrients of our green chiles. Here's how we do it:

  1. Selection: We start by hand-peeling the finest green chiles, ensuring each one is at its peak ripeness for maximum flavor and nutritional value.

  2. Freezing: The green chiles are placed in a vacuum chamber and quickly frozen to extremely low temperatures. This step locks in the natural flavors, colors, and nutrients, effectively pausing the aging process.

  3. Vacuum: This environment reduces the pressure around the chiles, which is essential for the next phase.

  4. Sublimation: In the vacuum chamber, the temperature is slightly increased, causing the ice within the chiles to transition directly from a solid to a vapor without passing through the liquid stage. This process, known as sublimation, removes the water content while preserving the cell structure of the chiles.

  5. Drying: After sublimation, the chiles undergo secondary drying to remove any residual moisture. This step ensures the chiles are perfectly crisp and ready for long-term storage without the need for preservatives.

  6. Packaging: Finally, the freeze-dried green chiles are carefully packaged in vacuum sealed bags. This packaging maintains their freshness, allowing you to enjoy their bold flavor and nutritional benefits whenever you choose.
